The Biker & The Baker is the third eatery opened and owned by Sarah and Rob Gartzman, following Sweeties Sandwich Shop and Mo Burrito (sold to longtime employee and Salida local in 2019). When opening this business in 2017, Rob and Sarah wanted to do things different this time around. They were looking to provide the community with more of an “evening experience” as well as a way to showcase Sarah’s first-class pastry art skills. To pair with this extravagant dessert menu, they incorporated sommelier skills and a wine menu featuring 75 wines from around the globe, changing the wine seasonally.

The Victoria Tavern building was constructed in 1900 by Mildred “ Millie” Ohmertz Johnson. Some consider her as Colorado’s first Female real estate developer. During the first 9 years the Building served the young and booming railroad community as a butcher shop, movie theater, mercantile and hotel, until eventually ending up as a tavern in 1909. For 115 years the “Vic” was a place where not all were welcome, as a brothel, and rough and tumble tavern full of railroad men and miners it developed a lurid reputation keeping the “respectable” folk away. In the 1980s Peter Simonson took over the bar and ran it as a bar and music venue until 2020. Now after being closed for 4 years we are excited to re- open the doors to the community. While paying homage to history, with your help, we intend to create an inviting and welcoming place for everyone. A Social House. A Public House. A Community House. So welcome to The Victoria Tavern and we encourage you to share in the stewardship of this legendary tavern as we cultivate the next century of history here together.
