We, Arno and Madison, own a food truck in Salida that has been open since September 2024. We have converted a horse trailer/family heirloom into a mobile food cart ourselves. We designed it to run on solar energy and propane gas and keep our menu small and simple, just like our trailer. We source our meats and cheeses from Scanga Meat Co, our eggs from Monte Vista, and all of our packaging is compostable.
Arno is from France and specializes in authentic French crepes and galettes. Galettes are a savory version of a crepe made with buckwheat flour, which is gluten free. He has been cooking crepes his whole life and enjoys bringing this traditional French meal to his new community in Salida. Madison is from the south, Arkansas and Louisiana mostly. She has worked in kitchens in New Orleans and Spain. She enjoys bold flavors bringing people together around food. Our Mascot, Cusha, is a rescued chihuahua that followed Madison home one day in New Orleans. She is very friendly to all of the customers, especially the little ones and an integral part of this team.
Our company is Crepe Magouille (Mah-gooey), a French word that means scheming and shenanigans. It’s a silly word, used when you make something work under peculiar circumstances and we believe that the 3 of us coming together, ending up in Salida, CO, and adapting a horse trailer into a mobile food cart is all due to the Magouille! We look forward to serving, feeding and being a part of this very special mountain town community.
